The decision to produce a sparkling wine from Trebbiano di Lugana grapes dates back to the foundation of the winery in 1960s. the deep knowledge of this variety that has a high capacity of adaption to climatic and environmental conditions, is the heritage of Sergio Zenato, who has learnt how to make the best of it. The creation of the bubble with the classic method enhances the features of the grape itself liberating all its purity.
100% Trebbiano di Lugana.
The must obtained by light pressing is fermented with the natural yeasts of the grape itself at a controlled temperature of 16 °C in stainless steel tanks, till the moment of blending and bottling for the second alcoholic fermentation in the bottle. The bottles stand in racks for 18 months and the wine evolves and matures thanks to the action of the yeasts, with the release of aromas from cellular breakdown. The bottles are then clarified and then the deposit is removed by dégorgement.
Excellent as an aperitif and with all meals.
